Abstract

This article proposes a reflection on the relevance of bovine milk production in Fray Mamerto Esquiú, a geographical space considered peripheral for dairy production if productive indicators are taken into account such as the quantity of liters produced, the quantity of animals in production, the occupied surface, etc. (Gutman et al., 2003; Sanchez et al., 2012). We carry out a study focused on characterizing the actors of the territory, describing the particularities of the productive units and their relationship with the organizations and institutions that promoted their development (Fernandes, 2006, 2009), incorporating the historical dimension to the analysis of the current situation . Methodologically, we carried out a qualitative study that reached all the productive units.
